Ampersand Sustainable Learning Center

I recently had the chance to visit with Amanda Bramble of Ampersand Sustainable Learning Center. She and her husband, Andy, have created an amazing living system around their home on 38 acres just north of Madrid, which is completely off the grid - without even a well. They grow vegetables, fruit trees, fruiting shrubs, and other perennials, based entirely on natural precipitation and rainwater catchment. The property is an inspiring demonstration site for hands-on learning about sustainable design and construction.

Zoe Economou – Ciudad Soil and Water Conservation District

You can find Zoe Economou most Thursdays at the Nob Hill Growers' Market, behind a table full of marvelously unusual things - fava beans or other uncommon types of beans, artichokes, sometimes even fennel pollen! She is active in many South Valley community initiatives, and she is a member of the Board of Supervisors for Ciudad Soil and Water Conservation District.

A Planner at the Mid-Region Council of Governments (MRCOG), she coordinates the New Mexico Ag Collaborative as well as the New Mexico Land Link program.

Marjory Sweet – Sterling Gardens

When Marjory Sweet came to New Mexico from her native Maine, she never intended to become a farmer. It started simply with desire to be outdoors as much as possible, then she fell in love with gardening. One thing feeds into another, and she connected with Eli Burg and Amanda Mione of Chispas Farms. That relationship blossomed into a partnership, and now the three co-manage Sterling Gardens, a one-acre plot on Sunset Gardens road.

Shauna Pearson – Educating the Next Generation of Farmers

Shauna Pearson is farm manager and supervisor of the highly successful internship program at Skarsgard Farms, New Mexico's largest Community-Supported Agriculture (CSA) operation. The program is designed for people who have little to no experience with farming. The goal, says Pearson, is to give each intern the tools to pursue their own operation. And in fact, the program has launched the careers of many local farmers.

Pear Mincemeat (and Mincemeat Pie!)

I can't believe how many people have told me recently that they've never had mincemeat pie! Its name is an artifact of its origin in medieval times, when spiced meat and fruit pies were common. Modern versions usually just contain apples, raisins, and lots of warm spices. I made this lovely pear mincemeat using the tiny, hard pears from our backyard tree; the recipe makes enough for two pies, or two quarts for canning.

Turkey Soup with Red Chile and Sweet Potato Dumplings

Thanksgiving leftovers are the best! The turkey carcass is a valuable resource that many people overlook. You can make a huge amount of rich stock from it, and with that stock, any number of fantastic soups! When I've celebrated the holiday at other people's homes and it looks like they're going to throw the carcass away, I'll actually ask if I can take it. This year I'm excited to make a new soup that I just dreamed up - it's sort of a mashup of New Mexican posole and my grandmother's chicken and dumplings.

The best cabbage ever

At the kickoff of the new extended season of the Albuquerque Downtown Growers' Market, farmers' tables were bursting with wonderful wintery crops! A menagerie of winter squashes rubbed shoulders with garlic, broccoli, cauliflower, kale, arugula, and some absolutely amazing cabbages. I bought a gorgeous ruffled cabbage from Chispas Farms, and it's probably the best cabbage I have ever tasted. It's worth seeking out for its fabulous texture and flavor, which is more like Brussels sprouts or Dino kale.

Roasted Cauliflower with Pecans and Cider Vinaigrette

I was thrilled to find cauliflower at the Growers' Market last weekend! Roasting this delicate vegetable gives it a whole new character - bold and nutty. A vinaigrette made with reduced apple cider and a sprinkling of pecans make this dish irresistible. Like all cole crops, it goes well with mustard, so don't leave it out even if you're skeptical. I can easily eat a whole cauliflower all by myself this way, but it is great as a side dish with just about anything.
