New Chef in Town: Edgar Beas and Lamb Saddle Recipe

Edgar Beas has been appointed executive chef of Rosewood Inn of the Anasazi. With his new cooking philosophy, Chef Beas’ dishes pay homage to indigenous cooking practices that include the use of hot stones and branches from local trees and shrubs to infuse a smoky flavor into many of the Inn’s new meat dishes. Rustic Cauliflower Soup by Monte Skarsgard

Skarsgard Farms draws its inspiration from Monte Skarsgard’s agricultural heritage and the family farm in North Dakota. He started his business in 2003 on four acres borrowed from the Los Poblanos Inn in Los Ranchos de Albuquerque and seventeen members. Since that time, he has successfully created one of the largest CSAs in the Southwest providing high quality organic food to over seventeen hundred families a week.

Local Hero: Farm & Table, Best Restaurant

Being able to work with over sixty-five local farmers, ranchers, dairies, cheese makers, winemakers, brewers, and food artisans is so amazing. Not only do we contribute to our local economy, but we also connect people. We encourage dialog and education between farmers and chefs, and then to our guests. It's a beautiful, reciprocal relationship and it creates meaningful experiences on so many levels. While this model is extremely challenging, it's even more so rewarding—truly a gift.

New Chef’s Table at Luminaria Restaurant

Santa Fe's award-winning Luminaria Restaurant at the iconic Inn and Spa at Loretto, A Destination Hotel, announced on June 25 that it has launched a new Chef's Table. The eight globally inspired menu options designed by renowned Executive Chef Marc Quiñones will be offered to groups of 6-8 people at a private table near a roaring kiva fireplace on the romantic Luminaria patio.
