Italian Salad When Really You Just Have Too Much Zucchini

This recipe works at a summer barbeque just as well as during the middle of winter (when zucchini are out of season but somehow still overstocked at the grocery store). On a hot day or a cool evening, this plate whispers sweet summertime into your ears with refined balsamic and strips of basil that wilt on impact with the hot veggies.

Summer in the Raw

The wonderful array of seasonal ingredients available at the local farmer’s markets and from our backyard gardens make it easy to create raw, plant based dishes that satisfy the senses and help keep your body feeling vibrant, light and cool through the warmest time of year. Even for those folks who generally favor cooked foods, summer is the season to enjoy Nature’s bounty in the raw!

Lamb Meatballs with Rosehips, Rosemary, and Figs

For the Eat Local Challenge this month, I'm seeking out a variety of local meats. Northern New Mexico lamb is available at the Los Ranchos Growers' Market from Mañanica Farm, or at the Santa Fe Farmers' Market from Shepherd's Lamb. At the Downtown Growers' Market, Ranchline All-Natural Meats sells lamb raised at Felix River Ranch in southern New Mexico. This year, I'm thinking of buying a whole lamb!
