A wonderful and creative way to make your morning meal dosha specific, nutritionally dense and satisfying to your taste buds is by having a smoothie for breakfast (or as a mid morning pick me up). Now I’m not referring to the old frozen fruit with a scoop of protein powder kind of smoothie that used to be so popular. What I’m suggesting is a more modern take on the smoothie.

Red Tractor Farm Blue Corn Pancakes

In recent years blue corn has had a commercial renaissance. It has a sweeter, nuttier flavor than white or yellow field corn, which may explain why chefs such as Mark Miller popularized blue corn tortillas and ignited its renaissance at his Coyote Cafe in Santa Fe back in the 1980's. The Red Tractor ladies like to make blue corn pancakes stuffed with bacon and green chile.

Poached Egg with Roasted Tomatoes and Tarragon Butter

Roasted tomatoes are a bright spot in winter - if you grow tomatoes, this is one of the nicest ways to put them up. Their intense umami flavor adds richness to any dish, but this is a great way to enjoy them, and it's become one of my favorite breakfasts. I sometimes use tomato jam instead, which I first tasted at the Corrales Growers' Market a few years ago.
